Oh, the annual Cookie Exchange Party!  It’s something that the kids and I look forward to each year. The kids decorate sugar cookies, get a visit from Santa, and play hard while the moms snack on yummy treats, including 60+ dozen cookies.  Really.  This year, there were 9 different varieties and 6-7 dozen of each!

Now, what do we do with all those cookies?  Of course….SHARE!!  (minus a few that we enjoy ourselves.)  These cookies go to neighbors, co-workers, teachers, and Christmas parties.  The sugar and butter wealth is shared all over our towns thanks to the annual cookie exchange.

Hard to pinpoint my favorite treat from this year.  They are all different and good in their own way.

I want to share an unique cookie with you, and its only unique because of one particular ingredient.  I can attest that they are really good, good enough to SHARE.  I love this cookie.  It’s not your typical oatmeal cookie.  And, its perfect for this time of year!

Sweet Potato Spice Cookies
(recipe adapted from Taste of Home)

Sweet Potato Spice Cookies Recipe

  • 42 Servings
  • 350 degrees; 13-16 minutes
  • 15 15 30                Ingredients

    • 3/4 cup butter, softened
    • 1/2 cup sugar
    • 1/2 cup packed brown sugar
    • 1 egg
    • 1 cup finely shredded uncooked sweet potato
    • 3 tablespoons orange or cranberry juice
    • 1 cup all-purpose flour
    • 1 cup whole wheat flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground nutmeg
    • 1-1/4 cups quick-cooking oats
    • 1 cup butterscotch chips
    • 1 cup flaked coconut
    • 1 cup chopped pecans, optional.  (I omitted)



    Directions

    • In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, sweet potato and orange juice concentrate. Combine the flour, baking powder, cinnamon, baking soda, salt and nutmeg; gradually add to the creamed mixture and mix well. Stir in the remaining ingredients.
    • Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 14-16 minutes or until firm. Remove to wire racks to cool. Yield: 7 dozen
