Whole Grain Waffle and Pancake Recipe
 *This recipe makes about   (extra waffles can be easily stored in
freezer – to be pulled out and popped in a toaster or toaster oven for a super
quick breakfast!)

½ cup all
purpose flour

½ cup whole
wheat flour

¼ cup corn
meal

¼ cup quick
cooking oats

2 tbsp sugar
½ tsp baking
soda

½ tsp salt
1 egg
1 cup
buttermilk

(You can
make buttermilk with milk by adding 1 tbsp lemon juice or vinegar & let sit
at least 5 min.)

2 tbsp
canola oil OR an Oil Replacement

Makes 8
medium sized pancakes or 6-8 waffles.


Double the
recipe, and make 12 large plate size pancakes

*We added an
apple slice for the body, put 2 waffle triangles sideways for the wings. Add dried
cranberries or raisins to decorate your butterfly’s wings.  Use syrup (agave nectar or honey) to make the
antennas. Kids can use this to dip their waffle into.

white flour for whole wheat and/or oats
