Twelve Days of Christmas – Day #6

Pack up these Mini Gingerbread Loafs or make them into Mini-Muffins for friends and family this Holiday Season.

Makes for great gifts, snacks, or for breakfast!











Classic Gingerbread (A little more healthy)

Ingredients:
1/2 c butter, softened
1/2 c applesauce
3/4c sugar, I used coconut sugar
2 eggs, beaten
3/4 c dark molasses
1/2 c milk
2 c whole wheat flour
1 c all purpose flour
2 tsp ground ginger
1 1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp salt
2 tbsp baking soda
3/4 c boiling water

Directions:
Preheat oven to 350 degrees.
Beat butter, applesauce, and sugar well.
Add in other wet ingredients and blend well.
In a separate bowl, add remaining dry ingredients and stir well.
While mixing, add dry ingredients slowly to wet batter, while adding the boiling water a little bit at a time.  Alternate adding water with dry ingredients.  Blend well.
Bake for 30-40 minutes in a 13×9 cake pan.  Bake for 8 min in mini-muffin pan or until inserted toothpick comes out clean.
