“Fried” Apple Pie Pancake |
½ cup all purpose flour
½ cup whole wheat flour
¼ cup corn meal
¼ cup quick cooking oats
2 tbsp sugar
½ tsp baking soda
½ tsp salt
1 egg
1 cup buttermilk
(Make buttermilk with milk and add 1 tbsp lemon juice or vinegar and let sit at least 5 min.)
2 tbsp canola oil
*Egg can be omitted for an allergy; no need to replace. They tasted and looked the same!
Makes 8 medium sized pancakes
Double the recipe, and make 12 large plate size pancakes
*Add a fruit face on top of any pancake.Strawberries – eyes, Blueberries – nose, sliced rounds of bananas for outline of smile. Drizzle with honey or maple syrup! Fun, cute and Yum!
Fried Apple Pancake Pie
Dip a sliced apple ring that has been cored into pancake batter.
Cook on a skillet or frying pan until batter is cooked through.
