You may have seen quinoa around and even started cooking with it without really knowing what it is.  Quinoa is a grain-like crop that is grown for its edible seeds. It is considered a pseudocereal rather than a true cereal. It can be used in place of pasta in gluten free dishes or as a source of protein in vegetarian dishes. It is a super-food because it is a whole-grain that is a complete protein, high in calcium, fiber, phosphorus and iron.  Quinoa can easily be substituted into regular dishes instead of pastas or rice to add protein and fiber.

This recipe puts a more nutritious spin for everyone’s favorite mac and cheese.  It would make a great side dish for your family this Thanksgiving!
