The hot days may take awhile to fade, but summer is coming to a close. Time to enjoy the last few weeks of your favorite summer fruit. Pineapple is a favorite at Kitchen House, and as a symbol of welcome in Hawaiian culture, this sweet and juicy fruit can be found hidden amongst the decor in our kitchen. People often think of pineapple for sweet dishes or as a tasty treat all on its own, but it can also add a delicious sweet tang to savory dishes like in this salsa. Enjoy on meat fresh off the grill, as a dip with chips at a backyard BBQ, or even as a pop of color and flavor in a taco.

Pineapple Salsa

Ingredients

  • 1 pound pineapple, diced
  • 5 Roma tomatoes, cored and diced
  • 1/2 bunch cilantro (about 1/2 cup), finely chopped
  • 1/2 cup red onion, finely chopped
  • 1-2 jalapenos, seeded and finely chopped
  • 1 Tbsp fresh lime juice
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine pineapple, tomatoes, cilantro, red onion, and jalapenos.
  2. Add lime juice and toss to coat. Season to taste with salt and pepper.
  3. Place in refrigerator and allow to chill for at least 10 minutes for flavors to blend.

Notes

This is fun served in the hollowed out pineapple shell used to make the salsa.
