Berries are in their peak right now. Fresh sweet strawberries add a burst of flavor and a beautiful splash of color to these pancakes. While most recipes will call for a teaspoon or two of vanilla extract, these pancakes live up to their name with two whole tablespoons of vanilla, which adds a complex undertone to the sweetness of the berries. Add your favorite pancake toppings and enjoy!

Strawberry Vanilla Pancakes

  • 1 1/2 cups all purpose flour
  • 2 Tbsp brown sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 Tbsp vegetable oil (or melted butter)
  • 2 Tbsp vanilla extract
  • 1 cup fresh strawberries, diced small


  1. Stir flour, brown sugar, baking powder, and salt together in a large bowl.
  2. Pour in milk, egg, oil, and vanilla.
  3. Whisk until well blended. Fold in strawberries. Or strawberries can be sprinkled over each pancake once poured on the skillet.
  4. Butter and heat a large skillet over medium heat.
  5. Drop large spoonfuls of batter onto the skillet. Cook until bubbles begin to form and sides are just set, about 2-3 minutes. Flip and cook until golden brown and set on the second side, another 1-2 minutes. Repeat with remaining batter.
  6. Serve warm with your favorite pancake toppings.
