Summer is well and truly here. A popular dessert in summer is the good old fashioned s’mores, but in this heat wave, no one wants to be standing around a campfire! A s’mores dessert you bake in the oven is a good alternative. These can be made in a pan and cut into bars or in a muffin tin for individual servings. They serve up all the flavor of this treat in air conditioned comfort. Great to take and share, or enjoy all on your own.

Ingredients

  • ½ cup unsalted butter (1 stick), melted and cooled
  • 1 large egg
  • 1 cup light brown sugar, packed
  • 2 tsp vanilla extract
  • 1 cup all purpose flour
  • 6 graham crackers, chopped
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Grease and line an 8x8 baking dish with parchment paper.
  2. In a medium bowl, add butter, egg, brown sugar, and vanilla extract. Whisk until smooth.
  3. Add in the flour and stir until just combined.
  4. Gently fold in the graham crackers, marshmallows, and chocolate chips. Turn batter out into baking dish and smooth the top.
  5. Bake for 25-30 minutes, or until bars have firmed up in the center and edges have set. Allow bars to cool for 30 minutes in the pan before cutting and serving.
  6. **Note- can be baked in a muffin tin for individual servings. Grease muffin tin really well and decrease cooking time to 15-18 minutes, or until edges have set.
