I love making dishes that are themed for 4th of July.  The Red, White, and Blue in this recipe is so fresh and colorful, anyone would want to try it!

I found this recipe for the fruit salsa on Pinterest and made it this past week during a kids cooking camp.  The kids diced the strawberries, tore the cilantro with their hands (they could cut it using kid kitchen scizzors), juiced the lime, sprinkled the salt, measured and mixed.

Red, White and Blue Fruit Salsa
Recipe adapted from: Two Peas and Their Pod


1 1/2 cup diced strawberries
1 cup diced jicama, about one small jicama
1 cup fresh blueberries
1/8 packed cup chopped, torn, or cut cilantro
1/4 cup finely chopped red or white onion
2 tablespoons finely chopped jalapeno pepper, stemmed and seeded, optional (I left out when making for kids)
Juice of 1 large lime
Salt, to taste
Tortilla chips, or Graham Crackers for serving

Directions:
1.
In a medium bowl, combine blueberries, strawberries, jicama, cilantro, red
onion, jalapeno, and lime juice. Stir until well combined.
2. Season with salt, to
taste.
3. Serve with tortilla chips, graham crackers or solo at room temperature or chilled.
4. Also would work well with fish or chicken.

Kids Kitchen Konnection:  Most kids chose to eat this without the tortilla chips.  Some ate just the strawberries and blueberries.  Over 1/2 of the class enjoyed this recipe, while the others were just not sold with these combinations.  Personally, I think it is new and fresh – different, and so pretty for a summer party!
