Waffle cookies are tiny, delicious, and oh so cute. This recipe uses standard pantry ingredients and a waffle maker to create a unique and fun twist on a well known dessert. They might just be the quickest cookies to make too. With a flavor like a cross between a sugar cookie and a top notch ice cream cone, they’re sure to be a hit with anyone who tries one!

Ingredients

  • 1½ cups all purpose flour
  • 1 tsp cornstarch
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, melted and cooled slightly
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ cup powdered sugar for dusting, optional
  • Optional add ins- chocolate chips, cinnamon, lemon zest

Instructions

  1. In a bowl, whisk together flour, cornstarch, baking powder and salt.
  2. In a separate bowl, whisk the butter and sugar together until well combined. Add in the egg and vanilla extract mixing until smooth.
  3. Stir the dry ingredients into the wet until just combined.
  4. Preheat waffle iron (setting 2 if able to adjust) and lightly grease both sides of the waffle iron using nonstick spray.
  5. Using a small cookie scoop, scoop the cookie dough into balls directly onto the waffle maker. About one tablespoon of batter in each section.
  6. Close the top of the waffle iron and allow cookies to cook until done. Some waffle irons will have a light indicating doneness, if not check occasionally after 3 minutes.
  7. Gently pry the cookies off the hot waffle iron using a butter knife or silicone spatula. Transfer cookies to a cooling rack and continue making cookies until all dough has been cooked.
  8. Dust with powdered sugar if desired and enjoy!
