While most recipes will call for a teaspoon or two of vanilla extract, these pancakes live up to their name with two whole tablespoons of vanilla, which adds a complex undertone to the sweetness of the berries. Yields 10-12 pancakes
Strawberry Vanilla Pancakes
Ingredients
- 1 1/2 cups all purpose flour
- 2 Tbsp brown sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1 cup milk
- 1 large egg
- 2 Tbsp vegetable oil (or melted butter)
- 2 Tbsp vanilla extract
- 1 cup fresh strawberries, diced small
Instructions
- Stir flour, brown sugar, baking powder, and salt together in a large bowl.
- Pour in milk, egg, oil, and vanilla.
- Whisk until well blended. Fold in strawberries. Or strawberries can be sprinkled over each pancake once poured on the skillet.
- Butter and heat a large skillet over medium heat.
- Drop large spoonfuls of batter onto the skillet. Cook until bubbles begin to form and sides are just set, about 2-3 minutes. Flip and cook until golden brown and set on the second side, another 1-2 minutes. Repeat with remaining batter.
- Serve warm with your favorite pancake toppings.
