This week, in honor of the 4th of July, I decided to make festive fruit pops. I found one on pinterest a few months ago and was very excited to try it. I decided to do this project with my preschool class. All day I had got the kids pumped up about making red, white and blue popsicles and when it was finally time to make them we couldn’t find the popsicle molds! So….we had to improvise. Clear plastic cups with popsicle sticks make for some odd shaped fruit pops but they still tasted yummy. However, they were difficult to eat so I would suggest using a smaller cup for the mold so it is easier to bite.

We went with raspberries, strawberries and blueberries and poured in coconut water on top. You can add whatever type of fruits you like and even play around with the juice until it taste just right for you. Other suggestions for the juices could be almond milk, fruit juice or even vanilla yogurt.

All you have to do is get your mold ready, add in the fresh fruit and then pour on the liquid and freeze for a few hours. If you are using a thick liquid like yogurt you can try to layer the fruit to make them even prettier. Refreshing!
