Ingredients

  • 2 large sweet potatoes, peeled and diced bite size
  • 1-2 tbsp olive oil
  • Salt and pepper, to taste
  • Garlic powder, to taste
  • Chili lime seasoning, to taste
  • 1 lb ground beef
  • 1-2 tbsp taco seasoning
  • 1 can (15 oz) of sweet corn, drained (or use thawed frozen)
  • 1 jalapeno, finely diced (remove seeds and ribbing for milder flavor)
  • 2 tbsp sour cream or Greek yogurt
  • 2 tbsp mayo
  • Juice of ½ a lime
  • 2 tbsp chopped cilantro
  • 2 tbsp cotija cheese
  • Optional garnish: avocado, cilantro, lime wedge, cheese, chili lime seasoning

Instructions

  1. Set the oven to 400 degrees. Line a baking sheet with parchment paper.
  2. Place cubed sweet potatoes on the prepared tray. Toss with 1 tbsp olive oil, sprinkle of garlic powder, salt, pepper, and and chili lime seasoning. Cook for 20 minutes or until sweet potatoes are soft.
  3. Brown the ground beef. Season with taco seasoning.
  4. Mix the drained corn, jalapeno, sour cream, mayo, lime juice, cilantro, and cotija cheese together in a small bowl.
  5. To make your bowl, place a scoop of roasted sweet potatoes at the bottom, top with taco meat, scoop of street corn, and your chosen garnishes.
