Ingredients

  • 1 lb chicken breast cutlets
  • 1/3 cup flour
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 8 sundried tomatoes, chopped
  • 2 tsp smoked paprika
  • 2 tsp oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp sugar
  • 1-2 tsp red pepper flakes
  • 2 1/2 cups chicken stock
  • 1 1/2 cups half and half, or coconut milk
  • 2 Tbsp parmesan cheese, plus more for topping
  • 10 oz ramen noodles
  • Garnish: cilantro, bean sprouts, edamame, green onion

Instructions

  1. Pour the flour onto a plate, and coat both chicken breasts thoroughly.
  2. Heat olive oil in a pan over medium heat, and add the chicken breasts. Fry each side for about 4-6 minutes, or until golden brown. Remove the chicken from the pan, and set aside while you prepare the broth.
  3. In the same pan, add the garlic, sun-dried tomatoes, smoked paprika, oregano, salt, pepper, sugar, and red chili flakes if using. Cook for about a minute, stirring constantly, until garlic is fragrant
  4. Stir in the chicken stock and the cream. Mix well to combine, then add in the parmesan cheese.
  5. Return the seared chicken breasts to the pan with the broth, and let the chicken cook gently for 5 minutes or until chicken is cooked through. Once cooked, remove the chicken, and set aside to slice.
  6. Bring the broth to a simmer and add the ramen noodles. Cook the noodles 3-4 minutes, stirring frequently to prevent sticking and to ensure even cooking.
  7. Divide the broth and cooked noodles into four bowls. Top each bowl with the sliced chicken. Finish by garnishing with cilantro, bean sprouts, edamame, and green onions.
  8. Sprinkle each bowl with crushed red pepper flakes and parmesan, if you choose.
