Out of ideas on how to serve chicken for the week? Try our mojito marinated chicken! You can get the chicken prepped and marinating the night before. Then pull it out the next day to grill or bake. Or marinate and cook it in the same day, if you are short on time. The lime, mint, and orange juice give it a fresh lift while the cumin and oregano ground it with savory warming spices. Serve along side some rice and beans or in a taco for a full meal.

Mojito Marinated Chicken

Ingredients

  • 1.5- 2 lbs skinless, boneless chicken breasts
  • 2 tbsp mint, chopped
  • 2 tbsp white rum (optional)
  • 1 shallot, chopped fine
  • 1 clove garlic, minced
  • 2 limes, zest of one and juice of two
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/4 cup orange juice

Instructions

  1. Mix together all ingredients for the marinade in a large bowl or dish. Add the chicken breasts to the marinade, making sure to coat the chicken. Allow chicken to marinate for at least 30 minutes or overnight.
  2. Set the grill to medium-high heat. Lightly oil the grill with vegetable oil or cooking spray.
  3. Remove the chicken from the marinade and place directly on the grill. Discard remaining marinade. Cover the grill and allow chicken to cook for approximately 5 minutes before reducing heat to medium. Allow chicken to cook for an additional 2 minutes, then use tongs to flip each breast over.
  4. Grill for an additional 5-7 minutes, or until the thickest part of your chicken registers 163 degrees F. with a digital meat thermometer.
  5. Let the chicken rest for about five minutes on a plate. Cut the chicken into slices and garnish with fresh chopped mint and extra lime slices.
  6. To Bake the Chicken:
  7. Preheat the oven to 425 degrees. Line tray or baking dish with foil or parchment paper. Bake for 18-20 minutes, or until the surface is golden and the inside temperature is 165 degrees using a meat thermometer.
  8. After removing chicken from the oven, wait 3-5 minutes before slicing and serving.
