Twelve Days of Christmas – Day #8

Need another gift idea?  How about gifting pancake mix in a jar or Tupperware container?  Mix up all the dry ingredients and your recipient takes care of the wet ingredients.  Include a pancake flipper (aka. spatula) and you have a great homemade gift. Don’t forget the recipe card with the rest of the ingredients and directions!

 

Gingerbread Pancakes
*Recipe adapted from My Whole Food Life

The Dry Ingredients: (Keeping them separate for gifting)
1 1/2 cup whole wheat flour
2 tsp baking powder
2 tsp cinnamon
2 tsp ginger
1/2 tsp nutmeg
1/4 tsp cloves
1/2 tsp salt
1/2 T coconut sugar

The Wet Ingredients:
1 egg 
2 T butter or coconut oil
1 1/4 cup milk (I used almond)
2 T molasses

Directions:
Mix all the dry ingredients in a bowl. In a small bowl mix the wet ingredients. Add wet to dry. Using a 1/4 cup scoop, scoop the batter onto a heated pan. When the batter starts to bubble, then flip to the other side. Serve immediately, or refrigerate or even freeze for later.
