NUTS?  Below you will find what we learned and discovered in the kitchen today:
·       Reduces our
risk for cancer, heart disease, weight gain, gallstones, and depression

·       Nuts are
quick and easy to add into:

o   Salads,
Stir-frys, trail mix, cookies, oatmeal, muffins, or plain as a snack.

·       Peanut
Butter, Sun butter, Almond butter

o   Great
protein and Good fat source for breakfast, lunch, snack, or dinnertime!

·       We
experimented with Peanuts in various forms.

o   Roasted in
Shell, Shelled and halved, chopped, and peanut butter.

·       What nuts do
I encourage people to eat the most?

o   Walnuts

o   Almonds

o   Peanuts

o   Pistachios

And,
pretty much in that order…..but good to eat a variety!!

Peanut Butter Granola Balls

1 cup creamy peanut butter

¼-1/2  cup honey or agave nectar

2 cups oats

½ cup mini semi-sweet
chocolate chips (optional)

½ cup ground flax seed
(optional)

Directions:

Stir all ingredients together. Form in to balls (you choose the size.)

Roll in coconut flakes, chopped peanuts (other nuts), or leave plain.

Pop in freezer for at least 30 minutes – 1 hour.

Eat!  Store in freezer or fridge for
a quick and easy snack, breakfast, or dessert treat.  Great for lunches!

Kids Kitchen Konnection:  They really enjoyed getting their hands messy today.  Rolling their mixture into balls and then licking the peanut butter off their hands!
