Macaroni and cheese, It’s a dish many of us know and have a nostalgic love for. Our mac n’ cheese recipe takes those memories and turns them into an easy one pot dish. You can dress it up depending on what cheeses you use, or keep it simple for a weeknight meal everyone will love.

Ingredients

  • 2 Tbsp butter
  • 2 Tbsp flour
  • 3 cups water
  • 4 cups milk
  • 1 pound uncooked pasta
  • 1 tsp salt
  • ½ tsp garlic powder
  • ¼ tsp mustard powder
  • 5 cups cheddar cheese, freshly shredded
  • Optional: sub ½ cup parmesan for ½ a cup of the cheddar

Instructions

  1. Melt butter in a large pot over medium high heat. Add flour and whisk to combine making sure there are no lumps. Cook for 1 minute stirring often.
  2. Whisk in one cup of water making sure mixture is completely smooth and cook until it starts to thicken. Gradually stir in remaining water and milk. Whisk in salt, garlic powder, and mustard powder to evenly distribute.
  3. Stir in pasta and bring to simmer, stirring occasionally. Reduce heat to medium-low to maintain simmer and cook 9-10 minutes or until pasta is al dente and liquid has thickened and reduced.
  4. Remove from heat and add cheese in three stages to ensure even melting and mixing. Taste and season as needed with salt. The sauce will seem thin at first. It will thicken after a few minutes of cooling.
